Simple & Delicious Spinach Salad
Ingredients:
1 5oz package of organic spinach ( I like 'Organic Girl' spinach)
1 juicy med. sized lemon
1/2 tsp of sea salt (or season to taste)
1 cup chopped tomatoes
1/2 cup of pine nuts
1/2 cup dried cranberries
1/2 cup crushed raw almonds 
1 Tbsp. of olive oil
1 Tbsp. of Flax seed oil
Fresh ground black pepper (season to taste)
Combine the spinach, lemon juice and sea salt in a large salad bowl. Fold them together gently, but make sure all of the spinach is covered. Add the tomatoes, pine nuts, cranberries, olive oil, and flax seed oil. Toss gently. Season to taste with fresh ground black pepper. Voila! Now you have a delicious light and healthy meal with all of the nutrients, vitamins and minerals.
